Pumpkin Pancakes

So today we got to have a fun little breakfast for Haley and her soon to arrive little girl. Of course as always we had tons of wonderful food, so ladies please post your recipes...I loved it all. Here is the recipe for the Pumpkin Pancakes. Don't forget the syrup (its the best part).:>

Pumpkin Pancakes

Mix the following in a bowl:

1 cup milk
6 Tablespoons canned pumpkin
2 Tablespoons melted butter
1 egg

Add the following and blend:

1 1/4 cups flour
2 Tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/8 teaspoon nutmeg
pinch of ground cloves

Cook pancakes about 3 minutes per side. Makes 8 to 10 pancakes.

Buttermilk Syrup

1/2 cup butter
1/2 cup buttermilk
1 teaspoon vanilla
1 cup sugar
1 teaspoon baking soda

Combine butter, buttermilk, and sugar and bring to a boil. Remove from heat and stir in vanilla and soda. It will fizz to 3 times the size so I usually do this in the sink.
